Girl with the pearl earringHey! Just a fleeting visit before three days of bank holiday weeding and bargain hunting begin! Wondering what to do with some healthy cereals that were taking up valuable space on the kitchen counter (they weren’t so good with just milk) – I suddenly had a craving for cornflake cakes. Nothing unusual for a Thursday morning in my crazy head.Healthier sweet treatsSo after a bit of digging around in the larder, I found and melted 60g of 85% dark chocolate, with a squeeze of date syrup and about 40g of goats butter. After everything was good and melty – I chucked in 3 cups of Rude Health honey multiflakes, stirred it all together so all the flakes were coated, then tipped it all into a loaf pan and let it chill for 3o minutes.Healthier sweet treatsQuite impressed with my proactivity (I am usually the biggest procrastinator) the husband and I devoured the lot. One benefit of only having cats for children, we get to eat all the cornflake cakes and before 10am!
